Der Focus liegt auf dem Studium der intra- und interspezifischen Biodiversität von Mikrobengesellschaften aus Lebensmitteln. Im Rahmen dieser Forschung wurden mittels Hochdurchsatz-Indentifizierung durch FTIR Spectroskopie zahlreiche neue Arten und Gattungen gefunden und eine ganze Reihe davon wurde formal neu beschrieben. 

Eine große Stammsammlung aus ca. 13.000 Isolaten wurde zusammengestellt. Diese Sammlung dient als Referenz für die Beschreibung neuer Taxa und für Biodiversitätsanalysen. Zusätzlich bildet die Sammlung eine Quelle für die Konservierung der mikrobiellen Diversität von lebensmittelassoziierten Habitaten.
